Convenient Meals
Hey there! I hope you’re energized from a restful weekend and your Monday went well. It’s always easier for me to start my week when I have actually have had time to rest. It also doesn’t hurt that the boss is on vacation!
You will notice with a lot of my meals, I am at my desk…at least 2 meals out of my day so I need food that is portable and requires minimal heating. It’s not that I love my office so much, (har) it’s just easier for me right now. Hopefully, this will change once I make some much needed changes to that part of my life.
Today started with a quick breakfast at my desk. Oikos Greek Yogurt (vanilla) and a nectarine topped with granola for some added crunch! It was kinda like dessert for breakfast and if you know me, you know that is perfectly fine with me. I can eat dessert at every meal and usually check out the dessert menu first when eating out…it helps me figure out what to choose for my meal if there is something that has caught my eye.
In between breakfast and lunch, I squeezed in a stick of string cheese. Lunch was a salad, basically the same salad I posted yesterday: romaine, spinach, carrots, zucchini and tomatoes with the addition of some shrimp and yummy, salty feta. (I’m trying to use up the food I have in my fridge! I have a habit of going to the grocery store and not using what I have. It’s time to stop wasting and stretch that dollar.)
I have signed up for a Pole class for the next 8 weeks that puts me home later than I typically like, so I want something fast! Something that can be made in about 10 minutes. Don’t worry, I’m not dying. I ate a Lara Bar before working out. I get grumpy if I don’t eat and that is putting it lightly.
Dinner consisted of zucchini noodles sauteed with olive oil and garlic with sea salt and pepper.
I love zucchini noodles. Well, I just love zucchini. Cooked, raw, in noodle form, whateva. These yummy noodles took the place of spaghetti which is typically eaten with Eggplant Parmesan. I bet you are wondering how I whipped that up so quickly? Thank goodness for Trader Joe’s…my BFF. He is always there when I need him.
The sauce clashes with my plate! BOOO!
I’m off to watch the “Housewives of New Jersey” Reunion.
